First Wedding Cake
Topper: made by Heidi Dage out of clay (first 3 pictures are before the topper showed up)
Layer 1: Chocolate cake with raspberry syrup and chocolate ganache filling
Layer 2: Vanilla cake with raspberry syrup and raspberry German buttercream filling
Layer 3: Vanilla cake doused with lemonade concentrate with lemon German buttercream filling
Layer 4: Same as layer 2
Bottom layer: Chocolate cake with raspberry syrup and chocolate/hazelnut German buttercream filling
All cakes were coated with a mix of "spackling" to fill in cracks and level (a mixture of ganache, buttercream, and cake crumbs) and a top coat of white chocolate ganache.
Two layers of modeling chocolate were rolled out and placed on top. The bottom layer was coated with pearl dust, and the design was cut out of the top layer.
I baked, filled, and froze the cakes two weeks before the wedding; then I added the spackling/ganache a week later and returned them to the freezer. The modeling chocolate was added 2 days before the wedding, and the cake was kept at 40 degrees.
